You will prepare each item and take home copies of the recipes you have learned. Aprons are provided to each student. Dress for safety and comfort. Please wear slacks and enclosed flat shoes. You are encouraged to bring your own Chef's Knife.
- Basic Cooking I - Knife SkillsIt is recommended that you bring your own Chef's Knife. This will be your best friend. Learn to chop, dice, slice, julienne, and mince like a pro, safely and efficiently. These skills are foundational yet many beginners think they are too difficult or time consuming to master. They are not!
- Basic Cooking II - Sauces and StocksMaking a good sauce is generally considered a foundation of serious cooking. This course teaches you the techniques and methods necessary to bring adventurous new flavor combinations to all your creations. Learn basic stocks and explore ways to modernize more traditional grand sauces, marinades, dressings and emulsion sauces to be pared with meat, fish, poultry and vegetables.
- Basic Cooking III - Cooking MethodsThe recipes we prepare in this session will incorporate a variety of cooking methods such as sautéing, roasting, broiling and poaching and introduce you to many exotic, gourmet products. You will also learn to bone a chicken, filet a fish and evaluate assorted meats.
- French CookingImpress your friends with your newfound finesse in preparing haute cuisine! They'll feel they've traveled to France when you delight them with Medallions of Pork Normandy, Tapenade and Grilled Salmon with Ratatouille.
- Fresh Fish & SeafoodLearn from the professionals how to purchase, prepare and present fresh fish! This comprehensive course covers dishes such as Rainbow Trout A La Meuiere, Grilled Grouper with Herb Butter and Spicy Fried Catfish with Cajun Red Remoulade Sauce.
- Dessert, Sumptuous DessertLearn to create the perfect finale to meals! You will create show-stopping desserts such as Chocolate Mousse Timbale, Raspberry Napoleon, and Grand Marnier Mousse. Also you will learn the techniques behind incredibly plated desserts.
Classes will be held at "The Kitchen". Take one class or take them all!
Each class costs $150.00. Deposit is required. Includes certificate of completion.
